What’s for Dinner Wednesday :: Sunday Supper!

Sundays in our home are pretty relaxed and low key. We attend church, have lunch, then everyone takes naps…myself included in recent weeks. I am usually not a ‘napper’ but I’ll tell you…happy nappy’s make momma happy!
My husband was in the mood for wings on Saturday so I thought I would try something alittle different. I like to try new foods…my husbands likes to stick with what he knows he likes. Boring…
I am working on him.
I took a chance and decided to try Raspberry Chipotle Chicken Wings with a Roasted Corn and Jalapeno Penne salad.
It was delicious.
I wish I could say I came up with the recipes myself…but I didn’t.
Our grocery store has in-house chefs who make all different types of food with gourmet sauces. They were cooking up wings with the Raspberry Chipotle and a few other things.
I bought the Raspberry Chipotle around Christmas time to serve as an appetizer with cream cheese but we never used it. (We used Pineapple Mango Haberno…delish.)
Also a few weeks ago, Sweet P and I tried their Jalapeno Penne salad…and she convinced me we had to make it.
And since it was in the 70′s in Texas on Sunday…we started the grill and had a really delicious and easy Sunday Supper….together.
Start with:
Roasted Corn (with olive oil, sea salt, and garlic)
Toss with whole wheat penne pasta:
Toss in jalapeno sauce…used about 1/4 cup and added a few tablespoons of sour cream (original recipe called for mayo…but I am not a fan of the may-o-nasty)
Mix together with fresh herbs…I used parsley
Next up…grill chicken wings (free range!) and toss with Raspberry Chipotle sauce:
It says hot pepper but it is definitely more sweet than spicy…my kiddos both love it
And there you go…
We had fresh fruit salad on the side….and a chilled glass of Moscato with a splash of fresh squeezed orange.
